Chocolate truffles are a delicious treat that are easier to make than you might think! Adding the light flavor of lavender really elevates these chocolates, they look gourmet and intriguing. These chocolates are decadent and unique, a great combination! The light lavender flavor balances out the richness of the dark chocolate and heavy cream. You can use them as a gift or as a lovely treat just for yourself!

How to Make Lavender Chocolate Truffles
Chocolate truffles always seem intimidating to make, but they are really quite simple. With just a few ingredients you can make your own truffles, and adding the lavender brings in a whole new flavor profile you’ll truly enjoy!
Ingredients You’ll Need:
- Dark Chocolate – 2 cups, finely chopped. I like to use the 70% cocoa chocolate, semi-sweet. The better quality the chocolate, the tastier the truffles.
- Heavy Cream – 1/2 cup of raw or organic heavy cream. Again, because there are so few ingredients in chocolate truffles, you want to be sure you are using the best ingredients.
- Dried Lavender Buds – 3 Tablespoons – Be sure to purchase the edible lavender and not the lavender processed for beauty products or potpourri
- Honey – 2 Tablespoons. I always encourage buying honey from a local apiary.
- Vanilla Extract – 1/2 teaspoon
- Salt – 1/4 teaspoon
- Dark Chocolate – 1/2 cup, 90% cocoa, melted and used for dipping your truffles. You can also use cocoa powder or even chocolate sprinkles. It really depends on what you want to coat your chocolate truffles.
Directions
- In a medium saucepan combine heavy cream, dried lavender buds, honey, vanilla extract, and salt. Heat on medium- high until the mixture begins to boil, then turn off and allow to cool for 5 or so minutes. This allows the flavor of the lavender to permeate into the cream.
- While the cream mixture is cooling, roughly chop your 70% chocolate and place in a glass bowl
- After you have allowed the cream to cool off a bit, pour the cream mixture through a sieve and into the glass bowl with the chocolate, straining the lavender buds by pressing them into the sieve to extract as much lavender flavor from the rest of the heavy cream mixture.
- Mix the chocolate with the heavy cream until the chocolate is smooth, and everything is evenly mixed. Cover with plastic wrap and refrigerate for 1 hour
- Once the ganache has cooled, using a 1 inch scoop or a teaspoon, gently scoop out little balls and place them on parchment paper. Using your hands, roll them into little balls.
- In a bowl or glass measuring cup, melt slowly, in the microwave (15 to 30 second increments at a time), your dark chocolate (90%). You can also use a double-boiler method to melt your chocolate.
- Using a fork, dip one chocolate ganache at a time into the melted dark chocolate and place on parchment to cool and harden. You can also roll your truffles in unsweetened cocoa powder or chocolate sprinkles.
- Keep chocolate cool to avoid melting, they can stay fresh for 7 days in the refrigerator.

Tips for Amazing Truffles
Use the best chocolate you can find. In order to get delicious chocolate, if you’re going to go through the trouble of making them at home, be sure to use high-end, high-quality chocolate. The better the chocolate, the better the truffle.
Lavender Buds should be edible and preferably organic. The better quality the lavender, the better flavor you will get from the buds.
Use cocoa powder for rolling truffles. To keep your fingers from sticking to the chocolate (especially if your hands are warm, rub them in cocoa powder before you roll your truffles.
Do not overheat your ingredients. If the heavy cream cookes to long on heat that is too high, it will scold and leave an “off” flavor to your ganache. This is the same with your dipping chocolate. Heat your chocolate slowly in the microwave as to melt and not burn the chocolate.
